About Capsicum spp.
Capscium oleoresin is extracted from Capsicum frutescens L. or Capsicum annuum L . It is standardized for its capsaicin content and valued for its pungency. The capsaicin content is available from 1 to 85% depending on the requirements. The pungency is also expressed in SHU (Scoville Heat Units) . Capsaicin is the general term used for the group of Capsaicinoids. Capsicum oleoresin is a mixture of Nordihydrocapsaicin, Capsaicin and Dihydro capsaicin.
